AIP Recipes-Purple Cabbage Rolls with Nomato Sauce.

If you are new to the Auto-Immune Protocol you are likely asking yourself WTF do I eat? Oh so much my friend, there are so many AIP Recipes. Also, hello… I’m not a food blogger. I was hangry while taking these pics but I did it for you because pictures are pretty. The nomato sauce on these AIP cabbage rolls have really replaced tomato sauce IRL. On the easy to hard cooking scale these AIP purple cabbage rolls are definitely not going to piss you off.

Nomato Purple Cabbage Rolls are the go to AIP recipe.

These are a quick little diddy that make you feel human and “normal again” like you are eating normal food. Which if you think about is crazy that normal food to us now means bread, pizzas (I love pizza just saying) gluten, preservatives, sugar, and other fast food options. Whole vegetables, locally or ethnically raised meats, and whole fruits feels like we are giving something up.

Well these AIP purple cabbage rolls with nomato sauce are here to fill the “real” food hole in your heart! There is also a Vegetarian option below for you grazers.

*I ate these regularly when I was on the AIP Diet for inducing my own alopecia areata and they made my tummy smile.

P.S.- I know purple cabbage is really red but does red cabbage sound as fun as saying purple cabbage?! I don’t think so!

AIP Purple Cabbage Rolls Ingredients:

Cabbage Rolls

  • Purple cabbage head
  • Grassfed organic ground beef ( if you can’t find organic or grassfed make sure no hormones dearies)
  • Cauliflower rice (found in the frozen food section or you can make your own you brave souls)
  • Chopped Onion
  • Thyme
  • Marjoram
  • Iodized or Himalayan Sea Salt
  • Garlic (fresh or powder)
  • Olive Oil

 

Nomato Sauce

  • 3 mediums sized beets (fresh or packaged)
  • 3-4 carrots (any color)
  • 1 clove garlic
  • 1/2-whole sweet or red onion
  • 1-2 tablespoons tamarind paste
  • Iodizes or Himalayan Sea Salt- 1 teaspoon or salt to taste

 

Making your Purple Cabbage Rolls 

I used to work in restaurants and I am a home chef extradordinare even though I am NOT a food blogger:) This recipe will cut time spent in the kitchen so you can shove these purple cabbage rolls in your mouth. Follow the order of cooking and your timing will be perfect.

Prep:

  • Wash veggies if applicable
  • Chop onion for roll filling

Step 1 Purple Cabbage  (Red cabbage)

Boil purple cabbage in large pot until leaves are cooked. Typically takes around 7-10 minutes. Make sure the lightly salted water is covering the top of the cabbage and cover with lid. Do not over boil or cabbage leaves will be too soft.

P.S.- Don’t cut the cabbage like I did- I just wanted to show you how pretty it is!

Step 2 Nomato Sauce

In medium pot put beets, carrots, onion, garlic, and salt to boil. Cover with lid to prevent spillage. Boiling time takes about 7- 10 mins.

Step 3 Cabbage Roll Filling

In medium to large pan add about a tablespoon of olive oil, salt, thyme, marjoram, chopped onion and ground beef to cook over medium high heat. When beef is half way cooked add cauliflower rice. Cover and let simmer on low heat for 3-5 minutes. (You don’t even really have to cover but if you wan extra juicy you can so the moisture stays in the meat and doesn’t float off into the air)

This is optional but you can also a spoonful of nomato sauce to the meat for extra flavor and just because it’s pretty.

Step 4 Nomato Sauce

Your cabbage and nomato sauce ingredients will be cooked by now! Carefully remove the cabbage and put in a bowl to the side to cool. You can also put the cabbage in a bowl of cold water to help cool but make sure you dry it as much as possible before you peel the leaves off for the filling later on. You can dump the cabbage water.

DO NOT DUMP the Nomato sauce water- you will need have of it to blend.

In a blender or NutriBullet add cooked Nomato ingredients, tamarind paste and a 3/4 cups water for boil and blend.

 

*You may need to add more of the Nomato water to get the consistency you want.

 

Step 5 Filling the Cabbage Rolls

Make Sure your cabbage has cooled or you will burn your little fingers and curse me out loud. If it is still wet pat dry with paper towel and shake as much water out of it as you can. Have all those yummy ingredient sections ready to go because this last part is quick and easy.

Gently peel off layers and put to the side.

Put a tablespoon and half amount of beef filling in the center of each roll and fold over to  enclose the beef. There is no picture of this because I didn’t want to put myself through this but I know you know what I mean! Your rolls don’t have to be perfect and if the beef filling is falling out take another cabbage leaf and fold over that attempted beef escapee sucker.

Step 6 Everything Together Now!

Place filled cabbage rolls in a pot or pan to simmer. They can be touching, they are friends. My rolls are never perfect nor do I care. If I’m on the AIP diet, perfection other than ingredients, is last on my list for obvious healing reasons.

Pour nomato sauce all over those sweet little purple rollies. Simmer on low-medium for 5-10 minutes.

And Voila you have just made AIP Purple Cabbage Rolls with Nomato sauce!

 

AIP Purple Cabbage Rolls are a Great Meal Prep Item!

I probably made these once a week on my first round of AIP for my Alopecia Areata. I love them and they will be on of my forever recipes.

They are an easy meal prep item that are so good that you can eat 3 days in a row no problem. This is also fun recipe for the kids because they are purple and how cool are they!

Vegetarian AIP Purple Cabbage Rolls Option

Vegetarian’s never get any love. Thankfully the AIP diet or any other auto-immune diet is mostly vegetable based! These purple cabbage rolls are also vegan…nailed it.

The one thing to be careful of is making sure you are ready to reintroduce seeds or legumes. If you aren’t ready, meaning you haven’t given your body some time to balance you can simply leave them out of the vegetarian cabbage roll filling. Vegetarian Cabbage Roll Filling

  • Chick Peas/Rice- this is only if you are towards the reintroduction phase of the AIP diet, as lentils and seeds are not initially allowed. If after reintroducing and testing, they don’t affect you than go to town.
  • Brocolli
  • Cauliflower (Cauliflower rice or whole)
  • Mushrooms
  • Marjoram
  • Thyme
  • Iodized or Himalayan Sea Salt
  • Garlic (fresh or powder)
  • Olive Oil

In small pot or medium pan sauté (or steam) brocolli, cauliflower, mushroom, garlic and herbs. When cooked throw (should be able to poke a fork through all) chop into small pieces.

If you are able to eat chickpeas and rice make sure both are cooked through and soft. Add chickpeas and rice to chopped vegetable mix.

Follow Cabbage Rolls filling Step 5 from above and enjoy veggie friends!
